Vegan Peanut Butter Banana Cookies
In my aim to get ahead of the game for my baking videos, I have been working with my friend Sarah on a peanut butter cookie video (it's musical, just in case you were wondering). I have adapted the recipe we will use in the video to work for those who follow a vegan diet. No real reason, other than I work with vegans and like to experiment. What has been created is VERY adaptable to different tastes, you can change the sugar type (white/brown) and add your own flavours (treacle, chocolate chips, cocoa powder). But here is the basic recipe.
1 cup/270g Peanut butter (smooth or crunchy, your choice)
1 cup sugar (White or brown, up to you)
1 tsp baking soda
1 tsp vanilla
Put your peanut butter, sugar, banana, baking soda and vanilla extract into a bowl, mush with your hands until combined. Add any additional flavours (1 tbsp of cocoa powder does wonders).
Scoop out 12 blobs using either an ice-cream scoop or your hands and bake for 8-10 minutes at 175ºc/350ºF
Take out, leave to cool, eat and enjoy. Thats it, easy as pie. For a really delicious flavour, add 1-2 tbsp of cocoa powder.
