Banana Muffins

Its Time to Bake, Banana Muffins


2 ripe Bananas (mashed to a smooth pulp)

spice mix (see below)

200g/1 cup sugar

120ml/ 1/2 cup vegetable oil (melted coconut oil also delicious)
280g/2 cups flour

4 tsp baking powder

20g/2 tbsp corn starch (corn flour)

240ml/ 1 cup milk (oat milk works best for non dairy)


Spice mix (optional)

3 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 tsp ground ginger

1/4 tsp ground turmeric

Cinnamon sugar

100g/1/2 cup sugar

2 tsp ground cinnamon

mix together

melt 50g/3tbsp butter or shortening (for dipping)

METHOD

Pre-Heat your oven to 350f/180c


Get a bowl, mash your bananas to a smooth pulp. You are welcome to use a blender.


Add the spice mix. Using a wooden spoon, mix this into the banana.

Add your sugar, mix in thoroughly.

Add the oil and mix thoroughly.

Add the baking powder and corn starch to the flour and mix in, before sieving into the mix and folding in gently.

Add your milk and mix thoroughly.

Line a 12 hole cupcake tin with cupcake/muffin cases and fill to 3/4 of the way up the side of your case. If you decide to use muffin cases that are higher than your cups, fill to 3/4 of the depth of your cupcake tin cup.

Bake for 15-20 mins until a skewer comes out clean when poked into the center of the muffin.

Leave to cool.

Melt 50g/3 tbsp butter you can also use shortening, and prepare your cinnamon sugar.

Dip the muffin in the butter, then into your cinnamon sugar.

Eat and enjoy!
