No Bake Lemon Cheesecake

Say Cheesecake and Die

Being a huge fan of the Goosebumps books as a young one (and an old one) and being overly excited about the movie coming out this week; I decided to pay homage to one of my favourite of the series, Say Cheese and Die. You are welcome. 

What comes below is the very simple, very delicious, recipe for the cheesecake. Enjoy! 


200g Digestive Biscuits

100g Butter

700g Soft Cheese

1x Lemon (zest only)

300g Icing Sugar 

300g Double Cream

2 tbsp Soured Cream


Crumb the digestives, either by bashing them to pieces with a rolling pin, or in a food processor. Melt your butter, then pour into the digestives to create a course sand that sticks to your fingers. Push this mix into the bottom of a 20cm/8" cake tin. (make sure you line the bottom) 

Whisk your soft cheese, add the lemon zest and whisk more. Add icing sugar and whisk again. Take your double cream and whisk until it has become whipped cream and more solid. Spoon into the cheese mix and whisk again. Add your soured cream. 

Pour the mix into the pre-lined tin and decorate as you desire on top. Leave to cool in the fridge for a minimum of 6 hours, or overnight preferably. 

Once set, take out, carefully take out of the tin, slice and enjoy!
