Love Spiral Cupcake

My head is in a spin, my feet don’t touch the ground.

This easy cupcake decoration is sure to send loved ones into a whirl of joy.


Ingredients:

150g plain flour (1 cup) + 2tsp baking powder

150g caster sugar (1 cup)

150g butter (2 sticks + 2tbsp)

2-3 eggs (weighing, you guessed it, 150g)

Vanilla extract/almond flavour/lemon rind

Icing sugar + water + red food colouring

Cocktail stick + Cupcake cases

Method

Mix your flour and baking powder evenly together.

With a mixer, best your sugar and butter together until smooth. Add the eggs and whip until combined. Add your flour 1 spoonful at a time, mixing gently. Add your flavouring. Mix until all together.

Scoop your mixture into cupcake cases to between 1/2 and 2/3 of the way up the case.

Bake at 350f/185c/gas 4 for 10/15 mins until a knife or skewer comes out clean.

Allow to cool completely.

Decorate by taking 100g-150g icing sugar (3/4-1 cup) and gradually add water until you get the desired consistency, like a thick syrup. Take 1/3 out and dye it red. Put this into a piping bag (or make your own).

spoon the white icing onto your cupcakes. Using the piping bag, drop dots of red in a spiral pattern towards the middle. Now, before it dries, run a cocktail stick clockwise through the centre of each dot to make a joining spiral heart design. Easy McPeasy.
